Big Wings for the Big Mercer Game

MACON, Georgia (41NBC/WMGT) – The Mercer Bears take on the Duke Blue Devils Friday in the NCAA tournament. Carl Fambro from Francar’s Buffalo Wings stopped by Daybreak to talk about game day food and how you can watch the game at Mercer Village.

Mercer Village is hosting a watch party at noon. Fambro says there will be a large TV screen out in the street for everyone to watch the game. There will be tables and chairs and the restaurants are offering specials.

Fambro also brought some of his wings and unveiled a new sauce special for Daybreak. It’s called the “California Gold.” Here is the recipe from Fambro:

2 tsp of chicken base

½ cup of red wine vinegar

¼ herb vinegar (or clear vinegar)

¼ cup of sesame oil (or canola or Wesson)

¼ lemon pepper seasoning

¼ cup of lemon juice

¼ cup white wine

½ cup of hot sauce

½ cup of honey

¼ cup of corn starch

½ tbl of cayenne

Add water for desired density (start with 2 cups)

  1. Add all liquids together and warm at low heat (less than five minutes) Warm only.

  2. Mix dry ingredients and sift together…makes for a better blend. Cook on medium for 10 minutes, stirring constantly.

  3. Uses ingredients found the kitchen shelf.

  4. Add cayenne for hotter sauce (start with tablespoons)

  5. Any hot sauce will do for base. If lack hot sauce, increase water and spices to compensate.

  6. You can not go too far or wrong.

Rated a level two without the cayenne, three with the cayenne

    Makes enough for 20 wings.

Tip off for the big game is at 12:15 p.m.
