MACON, Georgia (41NBC/WMGT) – Cards, flowers and candy are some of the typical go to Valentine’s Day gifts. If you want to make something for your sweetheart, a home cooked meal is an option.
Private Chef Scottie Johnson, winner of the Georgia Seafood Festival, showed us how to make tequila lobster flambe.

Tequila Lobster Flambe
1/4 cup tequila
1/4 cup white wine
Salt to taste
2 tablespoons olive oil
2 tablespoons butter, plus 1 tablespoon reserved
2 chopped shallots
2 tablespoons minced garlic
Freshly ground black pepper
1/2 teaspoon cajun seasoning
4 (1 1/2-pound) lobster tails, cut in half
Heat a large saute pan over medium-high heat. When the pan is hot, add the olive oil and butter. Add the shallots and saute until translucent, about 2 minutes. Add the garlic and cook for 1 minute. Season lobster tails with freshly ground black pepper, salt and cajun seasoning. Add the lobster meat side down and sear for 2 min. Turn over to shell side and cook until shell turn pink color. You might need to cover pan to make sure shell turns color.
Remove the pan from the heat and carefully add the tequila. Return the pan to the heat, ignite the alcohol, and cook until the alcohol burns off and the flames die out. Keep the pan moving throughout this process so nothing burns. Add lemon juice, remaining butter and season if needed, then serve over favorite pasta.
